What is vanilla?

Vanilla is a sophisticated flavoring that provides a special fragrance to baked goods, drinks, or perfumes that incorporate it. Vanilla comes from a creeping orchid, which is planted in the rain forest prior to the rainy season between the months of April and June. It grows in the tropical forest, creeping over tree trunks and branches.

Currently, vanilla is cultivated in Mexico, Costa Rica, Indonesia, Madagascar, China, Papua New Guinea, Guatemala, India, Sri Lanka, the Comoro Islands, Uganda, and Tonga.

Once the orchid is pollinated, it takes eight to nine months for the vanilla beans to mature. Vanilla is ready for harvest when the color of the tips of the bean pods (its fruit) change from green to yellow.

What determines vanilla’s quality?

Beyond the country of origin of the vanilla, it is of utmost importance that it is harvested at the moment it is fully mature to ensure its aromatic qualities and its high quality flavor. For that reason, it is important that the tip of the vanilla bean pod turns yellow in color (two inches) which indicates that the vanilla is fully formed within the pod. 


After it is harvested, the vanilla beans are cured by drying in the sun to develop their flavor, aroma, and characteristic color. 

Additional benefit

Our vanilla also undergoes a six month aging process in which each pod will shed 1 gram of water, ensuring that the pod only contains vanilla seeds and their oil, which eliminates the risk of molding.
